Does hot coffee destroy collagen powder?
No. If you are using a hydrolysed collagen powder — which is what almost all collagen supplements are — adding it to hot coffee does not undo anything. The short answer is that the processing step you are worried about has already happened, long before the powder reached your mug.
The longer answer is worth reading, because the question comes from a reasonable place and the distinction between types of collagen actually matters.
Why the question exists: native collagen versus hydrolysed collagen
Native collagen — the structural protein found in animal connective tissue, skin and bone — is a long, tightly wound triple helix. Apply enough heat to it and that helix unravels. This is what happens when you make stock: the collagen in bones and cartilage denatures, partially breaks down, and the liquid sets into a gel when it cools. That gel is gelatin.
The concern about heat destroying collagen comes from this. If heat can unravel the protein structure in a joint, surely it can unravel it in a supplement too?
The answer depends entirely on which form of collagen you are dealing with.
Hydrolysis already uses heat — and enzymes
Hydrolysed collagen (also called collagen peptides or collagen hydrolysate) is not native collagen. It has already been deliberately broken down. The manufacturing process takes raw collagen — bovine hide or fish skin, depending on the source — and subjects it to heat and enzymatic hydrolysis. The long protein chains are cleaved into short peptides, typically 3,000–5,000 daltons in molecular weight.
By the time the powder is in your tub, the structural triple helix no longer exists. There is nothing left to denature. The peptides are stable, water-soluble fragments. A cup of coffee at 65 °C is not going to do anything to them that has not already been done at higher temperatures during production.
What temperatures are we actually talking about?
Freshly brewed filter coffee sits at roughly 85–95 °C straight from the machine. By the time most people drink it, the temperature is closer to 60–70 °C. Espresso-based drinks with milk are typically 60–65 °C.
Collagen peptides in solution remain stable well above these temperatures. You would need sustained exposure to temperatures significantly higher than a hot drink to cause any meaningful change to the peptide structure — and even then, the peptides would simply hydrolyse further into smaller fragments, not revert to some less useful form.
In practical terms: your morning coffee is not the problem.
Gelatin versus hydrolysed collagen: one important difference
This is where the distinction between gelatin and hydrolysed collagen becomes visible in everyday use.
Gelatin — the partially broken-down collagen you get from long-cooked stock or from a packet of culinary gelatin — still has enough molecular weight to form a gel network when it cools. Dissolve gelatin in hot liquid, let it cool, and it sets.
Hydrolysed collagen does not do this. The peptides are too short to form that network. Dissolve a scoop of collagen powder in hot coffee, let the cup go cold, and it stays liquid. This is also why collagen powder dissolves cleanly in cold water, where gelatin would merely bloom and clump.
If you have ever added collagen to a hot drink and noticed it thickening as it cooled, the product you were using was closer to gelatin than to fully hydrolysed collagen peptides.
What about baking?
The same logic applies. Domestic ovens for baking typically run at 160–200 °C. Collagen peptides are stable at these temperatures for the duration of a normal bake. You can add collagen powder to pancake batter, porridge, energy balls or baked goods without the heat being a meaningful concern.
The one practical note: collagen is not a structural protein in the way that egg or gluten is. It will not provide lift or binding on its own. It mixes in without affecting texture noticeably, which is useful if you want to add it to something without changing the recipe.
Practical mixing tips
A few things that do matter, even though heat does not:
- Stir properly. Collagen powder dissolves in hot liquid readily, but it needs to be stirred in, not just dropped on top. Add the powder first, then pour the liquid over it, or add it to a half-full mug before topping up.
- Do not add it to a full, still mug. The powder will sit on the surface and partially dissolve unevenly. A brief stir solves this.
- Cold liquid works too. Both our bovine and marine powders dissolve in cold water. Marine collagen in particular dissolves very cleanly and has a neutral taste despite the fish source — a common assumption that puts people off unnecessarily.
- One 10g scoop per serving. Our 300g bovine tub gives 30 servings; the 250g marine tub gives 25. Both are 10,000mg of peptides per scoop.
