Collagen types: I and III versus I only
Bovine collagen contains both Type I and Type III collagen peptides. Marine collagen contains Type I only.
Type I is the most abundant collagen in the human body. Type III tends to occur alongside it, particularly in soft connective tissue. Bovine collagen reflects that pairing; marine collagen is a concentrated source of Type I alone.
For most people this distinction is not the deciding factor. The more practical differences are source, allergens and cost.

The bovine collagen is sourced from EU grass-fed cattle. The marine collagen is sourced from wild-caught fish in the North Atlantic.
Both are hydrolysed — broken down into shorter peptide chains — which is why both dissolve readily in liquid and why heat does not affect them. Adding either to hot coffee or tea is fine.

If you have a fish allergy, marine collagen is not an option. If you avoid beef, bovine collagen is not an option. For everyone else, the choice comes down to type, cost and preference.
Taste and mixability
Both are neutral in taste. The marine collagen does not taste of fish — this is the assumption that puts most people off before they try it, and it is not accurate. The hydrolysis process removes the compounds responsible for fish flavour and smell.
Both dissolve cleanly in hot or cold liquid with straightforward stirring. Neither leaves residue or a gritty texture. A 10g scoop into around 250ml of water, juice, coffee or a shake works for both.
If you are adding to a drink that is already full, stir rather than expecting it to dissolve passively.

Both products pair well with a source of vitamin C — fruit, vegetables, or a supplement. Vitamin C contributes to normal collagen formation for the normal function of skin, gums, bones, teeth, cartilage and blood vessels. That is an authorised claim for vitamin C, not for collagen itself.
